30-Minute Crispy Swordfish with Green Beans

Ingredients
  

  • For the Swordfish
  • 4 swordfish steaks about 6 oz / 170g each, patted dry
  • 2 tablespoons 30ml olive oil
  • Salt and black pepper to taste
  • 1 lemon half juiced and half cut into wedges
  • For the Green Beans
  • 1 lb 450g green beans, trimmed
  • 1 tablespoon 15ml olive oil
  • 2 garlic cloves thinly sliced
  • Salt and black pepper to taste
  • 2 tablespoons 5g fresh parsley, chopped, for serving

Method
 

  1. Pat the swordfish steaks thoroughly dry, then season both sides with salt and pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the swordfish 3 to 4 minutes per side, until deep golden-brown and 130-135°F (54-57°C) internally. Transfer to a plate and tent with foil.
  4. Wipe the skillet clean. Add remaining oil and heat over medium-high until shimmering.
  5. Add the green beans in a single layer. Cook undisturbed 3 to 4 minutes, until charred, then stir and cook 3 to 4 minutes more.
  6. Add the garlic and cook 30 seconds until fragrant. Season with salt and pepper.
  7. Squeeze lemon juice over the swordfish. Plate with the green beans, top with parsley, and serve with lemon wedges.
