Ingredients

  • 1 lb thick-cut bacon sliced into 2-inch batons
  • 1/4 cup cornstarch
  • Neutral oil for frying (about 4 cups)
  • 4 heads Belgian endive leaves separated
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small shallot finely minced
  • Kosher salt and freshly cracked black pepper

Method

  1. Toss the bacon batons with cornstarch until lightly and evenly coated.
  2. Heat oil in a deep pot to 350F, using a thermometer to confirm.
  3. Fry the bacon in batches for 3-4 minutes until deeply golden-brown and crisp, holding the oil close to 350F.
  4. Strain and reserve 3 tablespoons of the fat left in the pot.
  5. Whisk the warm bacon fat with vinegar, mustard, and shallot until combined. Season with salt and pepper.
  6. Arrange endive leaves on a platter, scatter with fried bacon, and drizzle with the warm vinaigrette. Serve immediately.
