Ingredients

  • 12 slices bacon cut in half crosswise
  • 1 lb sugar snap peas trimmed
  • 1 tablespoon brown sugar
  • 1/2 teaspoon black pepper
  • Toothpicks soaked in water for 10 minutes

Method

  1. Preheat the oven to 400°F (200°C). Arrange the bacon halves on a wire rack set over a sheet pan.
  2. Bake for 6 to 8 minutes, until the bacon has rendered some fat and turned pale and pliable, but is not yet crisp. Remove and let cool for a minute.
  3. Pat the snap peas dry. Bundle 4 to 5 peas together and wrap tightly with a piece of the par-baked bacon, securing with a toothpick.
  4. Arrange the bundles back on the rack. Sprinkle with the brown sugar and black pepper.
  5. Bake for 10 to 12 minutes, until the bacon is fully crisp and the peas are bright green and still tender-crisp.
  6. Let cool for a minute before serving.
