Anchovies and Spinach Bake with Honey Garlic

Fresh anchovies baked over wilted spinach with a sweet-savory honey garlic glaze, ready in about 25 minutes.

Ingredients
  

  • For the Spinach Base
  • 10 oz about 280g fresh spinach, or 1 package frozen spinach, thawed
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • Salt and black pepper to taste
  • For the Anchovies and Glaze
  • 1 lb about 450g fresh anchovies, cleaned and gutted, heads removed
  • 3 tablespoons honey
  • 3 garlic cloves minced
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • Salt to taste
  • Fresh parsley chopped, for serving

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. If using fresh spinach, wilt it in a pan with olive oil and garlic for 2 to 3 minutes. If using frozen, squeeze it dry.
  3. Season the spinach and spread it evenly across the bottom of a baking dish.
  4. Pat the anchovies dry and arrange them in a single layer on top of the spinach.
  5. Whisk together the honey, garlic, olive oil, lemon juice, and a pinch of salt.
  6. Drizzle the honey-garlic mixture evenly over the anchovies.
  7. Bake 10 to 12 minutes, until just cooked through and the glaze turns golden at the edges.
  8. Scatter fresh parsley over the top and serve immediately.
