Ingredients

  • 1/2 cup unsalted butter 1 stick
  • 2 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • 2 cups buttermilk cold

Method

  1. Preheat oven to 450F. Place butter in a 9x9-inch baking dish and melt it in the oven while preheating.
  2. Whisk together the flour, baking powder, sugar, and salt in a large bowl.
  3. Pour in the cold buttermilk and stir just until combined into a thick, wet batter.
  4. Remove the hot dish and pour the batter directly into the melted butter without stirring it in.
  5. Score the batter into 9 squares without cutting through to the pan.
  6. Bake for 25-28 minutes until deeply golden-brown with crisp edges.
  7. Let sit in the pan for 5 minutes, then cut along the scored lines and lift out.
