Sear the ground bison in hot oil for 3 to 4 minutes until browned but not fully cooked. Remove to a plate.
Cook the onion and bell pepper in the same pan for 5 to 6 minutes until softened.
Add garlic, curry powder, cumin, smoked paprika, and cayenne. Stir for 1 minute until fragrant.
Add crushed tomatoes and simmer uncovered for 10 minutes.
Stir in coconut milk, return the bison to the pan, and simmer 5 minutes to warm through.
Taste and adjust salt and pepper.
Make 6 wells in the sauce and crack an egg into each.
Cover and cook on low for 5 to 8 minutes until whites are set and yolks are soft.
Rest 2 minutes, garnish with cilantro, and serve with lime and bread.
