Crispy Bison and Leeks Flatbread

Quick-browned ground bison and crispy pan-fried leeks piled onto flatbread with melted cheese and a balsamic drizzle.

Ingredients
  

  • For the Bison
  • 1 lb ground bison
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • For the Crispy Leeks
  • 2 leeks white and light green parts, halved lengthwise and thinly sliced
  • 2 tbsp olive oil
  • Salt to taste
  • For the Flatbread
  • 4 flatbreads or naan
  • 1/2 cup shredded Gruyère or mozzarella
  • 2 tbsp crumbled goat cheese optional
  • Fresh thyme or parsley chopped
  • Balsamic glaze for drizzling

Method
 

  1. Preheat oven to 425°F.
  2. Cook ground bison in olive oil with smoked paprika, garlic powder, salt, and pepper for 5 to 6 minutes until just browned. Set aside.
  3. In a separate pan, cook sliced leeks in olive oil for 8 to 10 minutes until crisp and golden. Season with salt.
  4. Top flatbreads with shredded cheese, bison, and crispy leeks. Add goat cheese if using.
  5. Bake 5 to 7 minutes until cheese is melted and edges are crisp.
  6. Drizzle with balsamic glaze, scatter with herbs, slice, and serve.
