Easy Gochujang Rotisserie Chicken for Weeknights

Ingredients
  

  • For the Chicken
  • 1 store-bought rotisserie chicken meat shredded (about 4 cups)
  • 1 tablespoon neutral oil
  • For the Gochujang Sauce
  • 3 tablespoons gochujang paste
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons water
  • 2 scallions sliced, for serving
  • Toasted sesame seeds for serving

Method
 

  1. Shred the rotisserie chicken meat, discarding skin and bones, and set aside.
  2. Heat the neutral oil in a large skillet over medium heat. Add the garlic and ginger and cook 30 seconds until fragrant.
  3. Add the gochujang paste and stir constantly 30 to 40 seconds, until fragrant.
  4. Stir in the soy sauce, honey, rice vinegar, sesame oil, and water. Simmer 1 minute until thickened.
  5. Add the shredded chicken and toss to coat evenly in the sauce.
  6. Cook 2 to 3 minutes, stirring occasionally, until warmed through and the sauce clings to every piece.
  7. Scatter scallions and sesame seeds over the top and serve immediately.
