Ingredients

  • 1 cup uncooked farro or brown rice
  • 3 medium turnips peeled and cut into 3/4-inch cubes
  • 3 tablespoons olive oil divided
  • Kosher salt and black pepper to taste
  • 2 tablespoons honey divided
  • 1 pound large shrimp peeled and deveined
  • 2 garlic cloves minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 cups baby spinach or arugula
  • 2 tablespoons fresh chives chopped, for garnish

Method

  1. Preheat the oven to 425°F. Cook the farro or rice according to package directions and set aside to cool slightly.
  2. Toss the cubed turnips with 2 tablespoons of the olive oil and a pinch of salt. Spread in a single layer on a sheet pan.
  3. Roast the turnips for 25 minutes, until browned at the edges and fork-tender.
  4. Remove from the oven and toss immediately with 1 tablespoon of the honey while still hot.
  5. In a small bowl, whisk together the remaining honey, soy sauce, and rice vinegar.
  6. Pat the shrimp dry and season with salt and pepper.
  7. Heat the remaining olive oil in a skillet over medium-high heat. Add the shrimp in a single layer and cook for 90 seconds per side, until pink and opaque.
  8. Add the garlic and the honey glaze mixture to the pan. Toss the shrimp in the glaze for 30 to 45 seconds, until sticky and coated.
  9. Divide the grains and spinach among bowls. Top with the glazed turnips and glazed shrimp.
  10. Garnish with fresh chives and serve immediately.
