Greek-Style Lamb Burger with Tzatziki

Juicy ground lamb patties seasoned with garlic, oregano, and mint, topped with cool, thick tzatziki and served in warm pita.

Ingredients
  

  • For the Lamb Patties
  • 1.5 lbs ground lamb 80/20 fat ratio
  • 1/4 cup finely grated onion
  • 3 cloves garlic minced
  • 2 tbsp fresh oregano chopped (or 2 tsp dried)
  • 2 tbsp fresh mint chopped
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup crumbled feta optional
  • For the Tzatziki
  • 1 cup full-fat Greek yogurt
  • 1/2 English cucumber grated and squeezed dry
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • Salt to taste
  • For Serving
  • 4 pita breads or burger buns
  • 1 tomato sliced
  • 1/2 red onion thinly sliced
  • A handful of lettuce or arugula
  • Lemon wedges

Method
 

  1. Make the tzatziki first: grate and squeeze the cucumber dry, then stir into the yogurt with garlic, olive oil, lemon juice, dill, and salt. Refrigerate.
  2. Combine lamb, grated onion, garlic, oregano, mint, cumin, salt, pepper, and feta. Mix by hand just until combined, no more than 30 seconds.
  3. Divide into 4 patties, pressing a shallow dimple into the center of each.
  4. Let the patties rest at room temperature for 10 minutes before cooking.
  5. Cook in a hot cast-iron pan or on a grill, 4 to 5 minutes per side, without pressing down.
  6. Rest the burgers for 3 minutes off the heat.
  7. Warm the pita or buns and assemble with lettuce, burger, tzatziki, tomato, and red onion. Serve with lemon wedges.
