Marinated Lentils Burger with Cauliflower

Lemon-marinated lentils and cooked-down cauliflower shaped into hearty veggie patties, pan-fried until browned and served on a bun.

Ingredients
  

  • For the Marinated Lentils
  • 1.5 cups cooked brown or green lentils or one 15 oz can, drained and rinsed
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp ground cumin
  • 1 clove garlic minced
  • Pinch of salt
  • For the Patties
  • 2 cups cauliflower grated or pulsed into rice-sized pieces
  • 1 tbsp olive oil for cooking the cauliflower
  • 1/2 cup finely chopped onion
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup chickpea flour or breadcrumbs
  • 2 tbsp olive oil for cooking the patties
  • To Serve
  • 4 burger buns
  • Lettuce sliced tomato, and sliced red onion
  • Yogurt sauce tahini, or mayo, for topping

Method
 

  1. Toss cooked lentils with olive oil, lemon juice, cumin, garlic, and salt. Let sit 15 to 20 minutes.
  2. Cook grated cauliflower in olive oil for 5 to 6 minutes until softened and moisture has cooked off.
  3. Combine marinated lentils, cauliflower, onion, garlic, smoked paprika, salt, and pepper. Mash lightly, leaving some texture.
  4. Add chickpea flour or breadcrumbs gradually until the mixture holds together firmly.
  5. Shape into 4 patties and chill at least 15 minutes.
  6. Cook patties in olive oil over medium heat, 4 to 5 minutes per side, until browned.
  7. Assemble on buns with lettuce, tomato, onion, and sauce of choice.
