Whisk together the olive oil, lime juice, orange juice, vinegar, garlic, cumin, smoked paprika, oregano, chili powder, salt, and pepper in a medium bowl.
Add the turkey strips, toss to coat, and let them sit at room temperature for 30 minutes, or in the fridge for up to 2 hours. Don't go longer than that.
Toss the zucchini half-moons with the tablespoon of olive oil and a pinch of salt in a separate bowl. Keep it away from the marinade entirely.
Heat a large skillet or cast-iron pan over medium-high heat until it's genuinely hot. Add the zucchini in a single layer and let it sit for 2 to 3 minutes before stirring. Cook for about 6 to 7 minutes total, then move it to a plate.
In the same pan, add the turkey strips, shaking off excess marinade first. Cook for 4 to 5 minutes, stirring occasionally, until cooked through and lightly browned.
Warm the tortillas directly over a gas flame or in a dry skillet, about 20 to 30 seconds per side.
Fill each tortilla with turkey, zucchini, cotija, pickled onion, cilantro, and avocado. Finish with a squeeze of lime.
