Ingredients

  • 4 salmon fillets about 6 oz each, skin removed
  • 4 tablespoons unsalted butter softened
  • 2 tablespoons white miso paste
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 clove garlic grated
  • 1 tablespoon neutral oil
  • 2 bunches scallions trimmed

Method

  1. Mash together softened butter, miso, rice vinegar, honey, and garlic until fully combined.
  2. Pat salmon dry and season lightly with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes on the first side until golden-brown.
  4. Flip the salmon and add the miso butter around the fillets. Baste continuously for 2-3 minutes until glossy and caramelized.
  5. In the same skillet, add the whole scallions and cook for 2-3 minutes until charred and blistered.
  6. Plate the salmon with the charred scallions, spoon over remaining browned butter, and finish with sesame seeds.
