Ingredients

  • 1 lb Italian sausage casings removed
  • 1 tablespoon olive oil if needed
  • 1 lb shelf-stable potato gnocchi
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 cups baby spinach
  • 1/2 cup grated Parmesan plus more for serving
  • Kosher salt and freshly cracked black pepper
  • Red pepper flakes for serving

Method

  1. Brown the sausage in a skillet over medium-high heat for 6-7 minutes, breaking into crumbles. Transfer to a plate.
  2. Add gnocchi directly from the package to the hot pan. Let sit undisturbed 2-3 minutes until golden, then toss and cook 3-4 more minutes until crisped.
  3. Push gnocchi aside, cook onion 3-4 minutes until softened, then add garlic for 30 seconds.
  4. Pour in broth, scraping up browned bits. Stir in cream and simmer 2-3 minutes until thickened.
  5. Return sausage to the pan. Add spinach and stir until wilted. Stir in Parmesan until melted.
  6. Season with salt and pepper. Serve with extra Parmesan and red pepper flakes.
