Ingredients

  • For the Turkey
  • 1.5 lbs ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Peppers
  • 3 bell peppers mixed colors, sliced into strips
  • 1 small onion sliced
  • 2 garlic cloves minced
  • 1/4 cup chicken or vegetable stock
  • To Finish
  • 1 cup shredded cheddar or Monterey Jack optional
  • Fresh cilantro chopped
  • Lime wedges

Method

  1. Heat the olive oil in a large skillet over medium-high heat. Add the turkey and season with the garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Cook for 6 to 8 minutes, breaking the turkey apart, until fully cooked and browned. Remove to a plate.
  3. In the same skillet, add the onion and cook for 2 minutes. Add the peppers and garlic and cook for 1 minute more.
  4. Pour in the stock and cover the skillet immediately. Reduce heat to medium-low and steam for 4 to 5 minutes, until the peppers are crisp-tender.
  5. Uncover, return the turkey to the skillet, and stir to combine. Cook uncovered for 2 to 3 minutes, until excess liquid reduces.
  6. Top with the cheese if using, cover briefly until melted.
  7. Garnish with cilantro and serve with lime wedges.
