Weeknight Wood-Fired Lobster with Broccoli

Split lobster tails and broccoli grilled together over wood chips for real smoky flavor in about 35 minutes.

Ingredients
  

  • For the Lobster
  • 4 lobster tails 6 to 8 oz each, split lengthwise through the shell
  • 1/4 cup unsalted butter melted
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • Salt and black pepper to taste
  • 1 tbsp fresh parsley chopped
  • For the Broccoli
  • 1 lb broccoli florets
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • To Serve
  • Lemon wedges
  • Extra melted butter optional

Method
 

  1. Preheat grill to medium-high, adding soaked wood chips to coals or a smoker box.
  2. Split lobster tails lengthwise through the shell, leaving meat attached. Crack shell so the tail sits flat.
  3. Whisk butter, garlic, lemon juice, salt, and pepper. Brush over the lobster meat.
  4. Toss broccoli with olive oil, salt, and pepper.
  5. Grill lobster flesh-side down 4 to 5 minutes, flip, brush with more butter, and grill 3 to 4 minutes more until opaque and firm.
  6. Grill broccoli alongside, tossing occasionally, 6 to 8 minutes until charred and tender-crisp.
  7. Garnish lobster with parsley and serve with lemon wedges and extra butter.
