Winter Wok-Tossed Bacon Fritters

Crisp bacon and root vegetable fritters, fried until golden then tossed fast in a garlic-ginger soy sauce.

Ingredients
  

  • For the Fritters
  • 6 slices bacon finely chopped
  • 1 cup parsnip peeled and grated
  • 1/2 cup carrot grated
  • 2 scallions thinly sliced
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Salt and black pepper to taste
  • Neutral oil for frying
  • For the Wok Toss Sauce
  • 1 tablespoon neutral oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 2 scallions sliced, for serving
  • Toasted sesame seeds for serving

Method
 

  1. Cook the chopped bacon until crisp. Drain, reserving 1 tablespoon of the rendered fat.
  2. Combine the bacon, parsnip, carrot, scallions, eggs, flour, baking powder, salt, and pepper.
  3. Heat oil in a skillet. Drop heaping tablespoons of the mixture into the oil, flattening slightly.
  4. Fry 3 to 4 minutes per side, until golden and cooked through. Drain thoroughly.
  5. Heat the sauce oil in a wok over high heat. Add garlic and ginger, stir-fry 30 seconds.
  6. Add the soy sauce, rice vinegar, and honey. Simmer 30 seconds.
  7. Add the drained fritters and toss quickly 1 to 2 minutes to coat evenly.
  8. Transfer to a plate immediately and top with scallions and sesame seeds.
