Wrapped Halibut Gratin with Microgreens

Wrapped halibut gratin with microgreens is a 35-minute oven dinner for four: thick halibut fillets get a band of prosciutto, a Dijon-Parmesan-panko crust, and a quick bake until the center hits 145°F (63°C). Halibut is lean and costs real money, so the goal is a moist fillet with a crisp, golden top. Lemony microgreens go on after the oven, which keeps them bright and crisp.

Why This Halibut Gets Dressed Before It Bakes

Halibut has very little fat, so it moves from juicy to dry in a couple of minutes. Two things buy time and flavor. A band of prosciutto around the sides adds a savory layer between the fish and the pan. A thick mustard-and-crumb crust on top browns while the center finishes, and gives the soft fish something crisp to sit under.

Salt works differently here. Prosciutto and Parmesan are both salty, so the fish and the crust get pepper only. Taste first and add salt at the table if the plate needs it.

Ingredients

Halibut and Wrap

  • 4 skinless halibut fillets, 6 oz (170 g) each and about 1 inch (2.5 cm) thick
  • 8 thin slices prosciutto (about 3 oz or 85 g), 1 to 2 slices per fillet
  • 1/2 teaspoon freshly ground black pepper

Gratin Crust

  • 2/3 cup (40 g) panko breadcrumbs
  • 2/3 cup (55 g) finely shredded Parmesan
  • 1 teaspoon lemon zest (from 1 lemon)
  • 1 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon melted butter (14 g)
  • 2 tablespoons Dijon mustard (30 g)
  • 2 teaspoons olive oil (10 ml)

Microgreen Topping

  • About 2 oz (55 g) microgreens, roughly 3 loosely packed cups
  • 1 tablespoon lemon juice (15 ml)
  • 1 tablespoon olive oil (15 ml)
  • Lemon wedges, for serving

Swaps and allergens: this dish contains fish, dairy, wheat and mustard. Gluten-free panko works in the crust. Pea shoots, baby arugula or watercress can replace the microgreens. Without prosciutto, add 1/4 teaspoon salt to the crust.

Instructions

  1. Heat the oven. Set the oven to 400°F (200°C) with a rack in the center, and line a rimmed baking sheet with parchment paper.
  2. Dry the fish. Pat the fillets with paper towels until the surface looks matte, then season both sides with the pepper. Skip the salt.
  3. Wrap the fillets. Wrap a slice of prosciutto around the sides of each fillet like a belt, overlapping the ends underneath and leaving the top bare. Add a second slice if the first does not reach all the way around. Set each fillet on the baking sheet seam side down.
  4. Mix the crumbs. Stir together the panko, Parmesan, lemon zest, garlic powder and pepper. Drizzle in the melted butter and toss until the crumbs look evenly moist and clump slightly when squeezed.
  5. Add the mustard layer. Stir the Dijon and olive oil together, then spread a thin, even layer over the top of each fillet.
  6. Press on the crust. Pack the crumb mixture firmly onto the mustard in a thick, even layer. The crumbs should stay put when the fillet is tilted.
  7. Bake. Bake for 12 to 15 minutes, checking from 10 minutes. The fish is done when a thermometer in the thickest part reads 145°F (63°C), the flesh is opaque and flakes at the edge, and the topping is golden brown.
  8. Brown the top if needed. If the fish is done but the crust looks pale, broil for 1 to 2 minutes, watching constantly, until golden.
  9. Dress the greens. Just before serving, toss the microgreens with the lemon juice and olive oil in a bowl until lightly glossy.
  10. Serve. Rest the fillets for 2 minutes, set them on plates, pile the microgreens on top and add a lemon wedge. Serve right away.

Wrapped Halibut Gratin with Microgreens: How Long to Bake It

Bake wrapped halibut gratin at 400°F (200°C) for 12 to 15 minutes, until a thermometer in the thickest part reads 145°F (63°C), the flesh is opaque, and the crumb topping is golden. Fillets about 1 inch (2.5 cm) thick take this long. Thicker pieces need a few extra minutes.

Time is a guide and temperature is the answer. Start checking at 10 minutes, since oven strength and fillet shape vary. Thin tail ends cook faster than the center, so tuck a thin end under before wrapping.

Wrapping and Crumbing Without a Mess

  • Start dry. A wet fillet sheds both the prosciutto and the crust. Paper towels first, every time.
  • Keep the top bare. The crust needs direct contact with the mustard layer, so the prosciutto stays on the sides.
  • Seam down. The weight of the fish holds the ends of the prosciutto in place.
  • Press, do not sprinkle. Packed crumbs brown into a crust. Loose crumbs scatter and burn on the pan.
  • Use fine shreds. Finely shredded Parmesan melts into the crumbs instead of sitting in clumps.

Common Mistakes and Easy Fixes

  • Dry, chalky fish. It baked past 145°F (63°C). Pull it as soon as the thermometer reads 145°F (63°C), and check early.
  • Salty plate. Prosciutto and Parmesan already carry salt. Season with pepper only, then taste.
  • Crumbs sliding off. The fish was damp or the mustard layer was too thin. Dry the fillets and press the crust on firmly.
  • Pale topping. The oven runs cool or the crumbs were dry. Broil for 1 to 2 minutes, and make sure the crumbs are coated with butter.
  • Limp microgreens. They were dressed too early or heated. Dress them at the last minute and add them after baking.
  • Frozen fish that weeps. It was not fully thawed. Thaw completely in the refrigerator, then dry well.

Swaps and Sides

  • Other fish: Thick fillets of cod or similar mild white fish work the same way. Cook by temperature, not time.
  • Herbs: Stir 1 tablespoon of chopped fresh parsley into the crumbs.
  • Dairy-free: Use nutritional yeast in place of Parmesan, and olive oil in place of butter.
  • Sides: Roasted baby potatoes, steamed asparagus or buttered orzo all keep the plate light and let the crust stand out.

Storing and Reheating

This dish is best fresh. Leftover halibut dries out and the crust softens, so make only what will be eaten. Refrigerate leftovers within 2 hours of cooking in an airtight container, and eat them within 2 days. Reheat gently in a 350°F (175°C) oven until hot all the way through, or eat the fish cold flaked over a salad. Microgreens do not keep, so dress fresh ones for each serving.

Frequently Asked Questions

Can frozen halibut be used?

Yes. Thaw the fillets completely in the refrigerator, then pat them very dry. Wet fish steams under the crust and loosens the prosciutto.

Is the prosciutto necessary?

No. The mustard crust works on its own. The prosciutto adds a salty, savory edge, so add 1/4 teaspoon of salt to the crumbs if it is left out.

Can the fillets be assembled ahead?

The wrapped fillets can sit covered in the refrigerator for an hour or two before baking, but add the crumb crust just before the oven so it stays dry and crisp.

Serve It While the Crust Is Crisp

The crust is at its best in the first few minutes out of the oven, and the fish is at its best at 145°F (63°C). Plate the fillets promptly on warm plates, and add the microgreens last so they stay fresh and green.
